- 225 g organic buckwheat flour
- 1 1/2 tsps baking powder
- 1/2 tsp bicarbonate of soda
- 1 tsp Xmas spice (mixed spice)
- 2 persimmon
- 1 medium egg
- 100 g light brown Barbados or muscovado sugar
- 100 g unrefined golden caster sugar
- 60 g salted butter, melted
- 170 ml kefir
- 60 g Yockenthwaite ginger granola
- 10 g pecans, chopped (optional)
- Xmas spice
- 1 tbsp ground cinnamon
- 2 tsps ground allspice
- 2 tsps ground nutmeg
- 2 tsps ground ginger
- 1 tsp ground cloves
- 1 tsp ground coriander
- 1 tsp mace
Instructions to make to make Butterfly Kisses
- Preheat the oven to 180°C, gas mark 4 and line a 12-hole fairy cake mould with paper muffin cases. Combine the xmas spice mixes together. Place the flour, baking powder, bicarb of soda and 1 teaspoon of mixed spice in a medium bowl and stir until well combined.
- Thinly slice one persimmon half and dice the remainder. Stir the diced persimmon into the flour mixture and set aside the slices for the top.
- In a separate bowl, beat together the egg and sugars until pale and creamy. Beat in the melted butter until just combined, then add the kefir and beat again until incorporated. Stir the dry ingredients into the wet mixture, folding with a spatula until the batter just comes together.
- Crush the granola and pecans. Spoon the batter mixture into the paper cases, topping each one with a scattering of the granola/pecans. To make butterfly wings, push two slices of persimmon into each cake at a 45 degree angle.
- Bake for 20–25 minutes, until a skewer inserted into the centre of a fairy cake comes out clean. Leave to cool. Eat with a dollop of kefir cream.
